When discussing the main dining hall Rudolph said, "There is no question the [Ward/Haffey] dining hall is a really beautiful facility. It needs some concept changes."
He talked about keeping the stir fry, but offering some new options and "definitely keeping the pizza and pasta areas, but the delivery [of the food] will change." He said they plan on making more things to order instead of pre-made. Another station that he would like to see incorporated is an organic station. Everything would be made to order and completely organic. Vegetarian and vegan items will be available. He said that huge improvements will be made to the salad bar, "Double the amount of variety, you won't see any ice [it will be underneath], there will just be product and lots more dressing options."
He said that in the future he hopes to see changes made to late night dining. Some of his thoughts included extending dining hours to better serve students who would prefer to eat dinner at a later hour, and those who don't have time to eat until later in the evening. The idea is to turn the late night services into "more of a place for desserts such as smoothies, pretzels, upscale desserts, a place where you can get a late night snack, which would make some sense."
Rudolph said, "When we design restaurants now, that's what I like to call them, not cafeterias. When you think of a cafeteria you think of food that has already been cooked, it should be more like a restaurant, made to order for the students.
"It's just a different company, and with that comes new ideas, some changes and for the better, not worse. Lackmann is not about making money, we're about long-term relationships."
